The extensive evidence that a diet high in fruits and vegetables are associated with the decreased risk of cancer. My family and friends chuckle when I tell them I have broccoli dishes for breakfast each morning.  The cabbage family of vegetables, such as, collard greens, watercress, cabbage, cauliflower, broccoli, bok choy  sum daikon cabbage,  kale, kohirabi, brussel sprouts, mustard greens, radishes, rutabaga and turnip greens are known as cruciferous vegetables.  They are high in dietary fiber, calcium, iron and vitamins A and C. Each is known to reduce the risk of bladder, breast, cervical colon and prostate cancer. When these vegetables are chopped, shredded, chewed, or juiced they release a anti-cancer enzyme called indole-3- Carbinol that reacts with the vitamin C content of the vegetable to help cause cancer cell death.

Researchers believe that combining certain anti-cancer foods helps to increase their effectiveness in preventing unstable molecules from damaging cell structures.  Many of the anti-cancer foods are also good for the heart.  Especially cold water fish, like salmon, tuna, rainbow trout and sardines, that are rich in omega 3 fatty acids which helps to prevent blood clots.  Walnuts, flaxseed are plant based sources of omega 3.  Tumeric, which contains curcumin, is a seasoning often found in Asian and Indian cooking and curries.  It is a powerful antioxidant that may help to prevent cancer and treat heart disease.

Organic fruits and vegetables have more nutrients levels than conventionally grown foods.  There is also less water in organic plants, which makes them more nutrient dense.  Organics are six times higher in salicylic acids, the anti-inflammatory compound found in aspirin and Ringmaster Rubbing Oil.  Conventional fruits and vegetables are grown with the aid of synthetic fertilizer, herbicides and pesticides. An article published in the February 2003 edition of The Journal of Agricultural and Food Chemistry confirms that plants grown using conventional pesticide methods lose their defensive ability to respond to environmental stresses, like insects and competing plants.  The loss of the plants protective compounds causes a corresponding loss in the  in the protective properties in humans.  It is difficult for people to get the necessary nutrition from synthetically grown foods which is why supplementations of vitamins and minerals are necessary to make up for the loss in nutrients.
